Ingredients
  

Beef and Marinade

  • 1.25 lbs sirloin or ribeye cut into bite sized cubes
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon neutral oil
  • 1 teaspoon sugar
  • 2 cloves garlic minced
  • One half teaspoon black pepper

Lime Dressing

  • 3 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 clove garlic minced
  • One half teaspoon black pepper

Noodle Base

  • 8 ounces rice noodles cooked and rinsed
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes halved
  • One half cup thinly sliced red onion
  • One half cup cilantro
  • One quarter cup Thai basil

Optional Additions

  • Pickled carrot and daikon
  • Crispy shallots

Instructions
 

  • Marinate the beef with soy sauce oyster sauce fish sauce oil sugar garlic and black pepper for 10 to 15 minutes.
  • Whisk together lime juice fish sauce soy sauce sugar garlic and black pepper to make the dressing.
  • Cook the rice noodles according to package directions then rinse under cool water and drain well.
  • Heat a large skillet over high heat until very hot.
  • Sear the beef in batches to avoid steaming and cook until browned on the outside but still tender inside.
  • Toss the hot beef with a few spoonfuls of the lime dressing.
  • Add noodles cucumber tomatoes red onion cilantro and Thai basil to serving bowls.
  • Top with the warm shaking beef.
  • Drizzle with more lime dressing.
  • Add pickled vegetables or crispy shallots if using.
  • Serve immediately.
