Ingredients
  

  • 2 cups finely diced pineapple
  • 2 tablespoons grated fresh ginger
  • 3 tablespoons sugar
  • 1 tablespoon lime juice
  • 1 pinch salt

Instructions
 

  • Combine pineapple, ginger, sugar, lime juice, and salt in a small saucepan.
  • Cook over medium heat, stirring often, until the pineapple softens and the mixture thickens into a glossy, jammy consistency, about 15 to 20 minutes.
  • Taste and adjust with more lime juice or sugar as needed.
  • Cool completely before transferring to a clean jar.
  • Refrigerate and use within 1 to 2 weeks.

Notes

  • For a smoother texture, mash lightly with a fork during cooking.
  • If the pineapple is very juicy, extend the cook time until thickened.
  • Great on bánh mì, rice bowls, grilled meats, yogurt, and cheese boards.
