- 1 cup coconut milk
- 1 cup cold water
- 3 tablespoons pandan simple syrup
- 1 cup crushed ice
- 2 tablespoons coconut cream
- 1 pinch salt
- Optional 2 tablespoons diced young coconut meat
- Optional fresh pandan leaf for garnish
Combine the coconut milk, cold water, pandan syrup, and salt in a small pitcher and stir until smooth.
Fill two tall glasses with crushed ice.
Pour the pandan coconut mixture over the ice.
Top with coconut cream and swirl gently.
Add diced young coconut meat if using.
Garnish with a pandan leaf and serve immediately.
- Adjust sweetness by adding more or less pandan syrup.
- For a lighter drink, replace half the coconut milk with additional cold water.
- Chill the coconut milk beforehand for the coldest, creamiest texture.
