Ingredients
  

  • 1 cup fresh or canned pineapple chunks
  • ½ cup coconut milk light or regular
  • ½ cup cold water
  • 1-2 Tsp cane sugar syrup optional, to taste
  • 1 Tbsp fresh lime juice
  • Ice
  • Pineapple wedges or lime wheels garnish

Instructions
 

  • Add pineapple, coconut milk, water, lime juice, and cane sugar syrup (if using) to a blender.
  • Blend until smooth and creamy-light.
  • Fill two glasses with ice.
  • Pour the mixture over the ice.
  • Garnish with pineapple or lime.
  • Serve chilled.

Notes

This drink is intentionally light — not a smoothie, not a heavy coconut shake. It’s inspired by the tropical fruits of the Mekong Delta, where pineapple and coconut grow abundantly along the river. The lime keeps it bright, and the cane sugar syrup adds a subtle, clean sweetness if needed. Suggestion: Add your go-to white rum to make this a Vietnamese-inspired tropical cocktail.
