  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon neutral oil
  • 1 to 2 teaspoons sugar to taste
  • 1 small garlic clove grated
  • 1 to 2 teaspoons water as needed
  • White pepper to taste

Instructions
 

  • Whisk together the fish sauce, rice vinegar, lime juice, and sugar until the sugar dissolves.
  • Add the grated garlic and neutral oil.
  • Whisk until the vinaigrette looks glossy and balanced.
  • Add a splash of water for a lighter, more pourable consistency.
  • Finish with white pepper to taste.
